I thought these were perfect, Matt still prefers the bacon-wrapped version though. This is another nice jalapeno variation - not too spicy and very filling.
Matt's Sausage-Stuffed Cheesy Jalapenos
Ingredients
1 pound low fat ground sausage
1 package low fat cream cheese
1 cup shredded cheddar cheese
1 pound (about 25) fresh jalapeno peppers
1 tablespoon minced garlic
1/4 cup breadcrumbs or Panko
Salt and pepper
Directions
Prep grill or preheat oven to 425 degrees. Prepare peppers by removing tops and seeds. Cut into halves lengthwise or keep whole if you prefer.
In a skillet cook sausage and garlic completely over medium heat, drain grease. Combine sausage, salt and pepper, and cheeses in a bowl.
Spoon about 1 tablespoon sausage mixture into each jalapeno. Dip cheesy side of each pepper into a shallow bowl of bread crumbs then arrange in a baking dish.
Grill peppers for about 15 minutes or bake for 20 minutes, until bubbly and lightly browned.
